So I spent Saturday mapping it out - what to drink, what to learn from (NOT to dump), what to enjoy midterm and what to age. Now every bottle has a home within a home and will never go forgotten. Most importantly, we made these determinations together and still do. The taster's physiology evolves, just as winemaking techniques and technologies.
